    2      cups          rolled oats
      1/2  cup           steel-cut oats
    1 1/2  cups          wheat or rye flakes
      1/2  cup           rye flour or whole wheat flour
      1/4  cup           powdered nonfat milk
      1/2  cup           millet
    2      tbsp          cinnamon
    1      tsp           nutmeg
    2      tbsp          apple juice concentrate
    2      tsp           vanilla
    1                    split vanilla bean
 
 1.  Place oats and wheat or rye flakes in a colander.  Pour cold water over
 them just to dampen, then drain.  Place in a bowl.
 2.  Add rye or whole-wheat flour, powdered milk, and millet.  Mix gently with
 a fork and place on a nonstick baking sheet.
 3.  Sprinkle with half of cinnamon and nutmeg and with the combined apple
 juice concentrate and vanilla.
 4.  Toast in a 375-degree oven for 15 minutes.  Add the remaining cinnamon
 and nutmeg. Mix lightly and toast for another 15 minutes.  Repeat
 until the granola is golden brown - about 45 minutes total.
 5.  Cool and store in a tightly sealed jar to which you have added a split
 vanilla bean.
